The Seed to Table concept comes from Alice Waters, founder of Chez Panisse and creator of “California Cuisine,” as part of her Edible Schoolyard project to create garden-based curriculums in schools, with a focus on fresh food, nutrition and culinary skills. With the support of the Slow Food Phoenix chapter, the Desert Marigold School’s Seed to Table program is serving as a local model, with a one-acre planted garden providing a hands-on approach to teach kids about soil health, composting and something as simple as what food looks like when it comes out of the ground. The projects still to be funded include a shed, gardening equipment and the construction of an indoor/outdoor kitchen where kids can learn the value of freshness and how to prepare and cook the produce to maximize flavor and nutrition.
